Keep your KAN knives sharp without a learning curve.
This is the Wicked Edge Venture, set up the way KAN knives are actually ground: 15° per side. The included precision guide locks the angle so you are not freehanding on a stone or chewing up the edge with a pull-through sharpener.
Compact at about 4 oz and made in the USA, the Venture includes a dual-sided 500-grit diamond stone and ceramic hone, a leather strop, and the 15° precision knife guide already installed. The guide stores in the handle. The sharpener is covered by Wicked Edge’s 5-year warranty.
KAN angle guide
- Use the included 15° guide for KAN’s straight-edge chef, santoku, paring, utility, and slicer knives.
- Almost all KAN knives are 15° double bevel. Boning knives and steak knives are the exceptions at 20°; add the optional 20° guide for those.
- The Venture is for V-bevel edges and is not designed to restore serrations on a bread knife.
Optional diamond stones
- 100/200: aggressive repair or reprofiling for a chipped or very dull edge.
- 800/1000: the first useful upgrade for refining the edge after the included 500 grit.
- 1500/2200: extra-fine polishing when you want to take the finish further.
Extra stones are optional—the included 500-grit diamond, ceramic hone, and strop are enough to get started.
How to use it
Do not use the Venture as a pull-through. Follow the belly of the knife with light pressure and keep the same angle on every stroke.

Trying to decide which handle to go with?
Aesthetic
The dark ebony wood is beautiful and classic, while the jet-black G10 looks very slick and modern. That part is totally up to preference in looks.
Weight
We have worked to make sure the balance feels right with either type of handle material, but overall, the G10-handled knives will weigh slightly more. In the case of our chef knife, you can expect an extra ounce. Again, the balance of the knives makes the weight difference feel minimal.
Care and Durability
Even though ebony wood is extremely hard, the G10 handles are slightly more carefree as they are impervious to water and may scratch less easily. Remember, none of these knives should ever go in the dishwasher (hand wash and dry immediately). Really, the ebony isn’t high maintenance, but it wouldn’t hurt to rub a couple drops of mineral oil on it every now and then.
Hammered vs Non Hammered
On our chef knife, we offer both a hammered (tsuchime) finish and non-hammered. The main decision is which look you like better, as it is mainly an aesthetic choice. That said, the hammered dimples can aid slightly in food release. Again, it’s mostly which look you prefer.
